German Pancakes with Republic of Jam!

Last week I caught the flu bug. It basically drop kicked me into bed and left me there for three days. On the fourth day I was able to get my butt out of bed to make a yummy breakfast! My mission was something simple but delicious. This is where German Pancakes came into play.
My first experience with German Pancakes was when I was in 6th grade, and that is an experience I will never forget. A friend of mine came back from living in Germany and her mom prepared this dish for me after I spent the night there. As a 6th grader I was confused by the "pancakes" coming out of the oven. I certainly thought it was strange but my confusion was quickly left behind once I took a bite and realized how decadent this breakfast is. Ever since then, I was in awe of these fantastic oven-pancakes from Germany!

German pancakes are EASY! Here is how you do them:

6 eggs
1 cup of flour
1 cup milk
Dash of salt
1 tablespoon of vanilla! (I love vanilla, I will throw it in whenever I can!)

First you need to turn on the oven to 400 degrees and place a 13x9 baking dish into it. Next, throw ALL the ingredients into the blender! Yes, a blender! Blend until the batter is smooth. Take the baking dish out of the oven and melt 2 tablespoons of butter in it.


Once the butter is melted, pour the batter into the baking dish and place in the oven. Cook for 20 minutes.

Once the pancake has finished baking, dust it with some powdered sugar! You can then top them with syrup, peanut butter, honey, fruit, or jam. I topped mine with some raspberry vanilla jam from my friends at Republic of Jam!

The German Pancake with the Republic of Jam was a spectacular breakfast. It was easy, fast and delicious! If I was not sick, I would have grabbed some bubbly to pop open with this dish. Maybe an Asti Spumante or dry Lambrusco even!
